Place wiping cloths in chlorine bleach sanitizer when not in-use. Change the solution every 3-4 hours to maintain the correct concentration: 1/2 teaspoon bleach in 1 L of water. The sanitizer is required to reduce the number of pathogens (germs) on food contact surfaces so that customers do not get sick.
