      • The surfaces of the shelves located near the front of the house hand sink are worn out. Please repair the counter surfaces to maintain a surface that is smooth, non-porous, durable, and easy to clean.

      • Cartons of bacon was stored directly on top a box of green bell pepper inside a cooler.The chief cook transferred the cartons of bacon to a cooler that had only raw meat.Always store raw meat below any fresh produce or cooked food. Alternatively, a separate storage can be created for raw meat.

      • No surface sanitizer was present in the kitchen when PHI arrived. Only a bucket with soap and water was observed. A bucket of bleach-water sanitizer was made during inspection. Please ensure you always have a sanitizing solution available and are storing wiping cloths in them whenever food is being prepared.

      • Boxes of food (raw potatoes) was observed stored directly on the floor. Please ensure you keep food off the floor.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Frozen chicken wings were observed sitting in a sink filled with water when the PHI arrived. Please be aware the following methods are acceptable for thawing frozen meat:- under cold, running water - in the fridge at 4 degrees Celsius or less- defrosting in microwave then cooking. Staff turned the tap on such that it was under cold, running water.

      • 1) The counter surface near the front of the front of house hand sink remains in disrepair as there are several holes in the counter surface.Please repair the counter surface to maintain a surface that is smooth, non-porous, durable, and easy to clean.2) This same sink appears to be leaking as evidenced by a bowl full of brown water located under it. Please repair the plumbing issue at this sink.
