- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The thermometer in the deli sandwich cooler was reading inaccurately. Staff must be able to verify that the temperature is at or below 4 C where hazardous foods are stored. There was no thermometer that could be located in the cooler that stores creamers for coffee. Please provide working and accurate thermometers in both of these units.
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- No sanitizer available to sanitize food equipment parts or food contact surfaces. Only soap and water used. Dishwashing must include washing in soapy water, rinsing in clean water and sanitizing in a 100 ppm bleach solution or 200-400 ppm quat solution. Please obtain a container of bleach (unscented) or quat for use and applicable test strips.
- 14. Does the facility have an adequate supply of potable hot and cold running water and is the water sampled at required intervals?
- There is no cold water on at the sink on the coffee bar. Please ensure the cold water tap is repaired and both hot and cold water are on to this sink.
