- Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine detected at dish surface after rinse cycle of dishwasher.
- Corrective Action(s): Sanitizing step must be done manually. Fill one sink with 100 ppm - 200 ppm bleach solution and ensure dishes are submerged in this solution for 2 minutes after being washed in dishwasher, then allow dishes to air dry. Bleach solution in sink must be changed every 4 hours at a minimum.
