- ensure to make a sanitation plan for the facility that includes: a. Sanitation procedures for non food contact surfaces, equipment, utensils or refrigeration units at a frequency that will prevent the accumulation of dust, dirt, food residue and other debris. b. The designated food handler(s) responsible for the cleaning and sanitizing; v. The frequency of cleaning and sanitizing.

- In accordance with Section 3.3.3 of the Nova Scotia Food Services and Food Retail Code, you must store potentially hazardous foods at a temperature of 4 degrees Celsius or less. Repair cooler. Keep all cold foods in the cooler when they are not being prepared.

- In accordance with Section 3.3.5 of the Nova Scotia Food Services and Food Retail Code, you must hold all hot foods at a temperature above 60 degrees Celsius. Adjust warmer to ensure it reached 60C. Keep all hot foods above 60C.

- Develop a detailed cleaning schedule including what has to cleaned, what chemicals are to be used, how often an area needs to be cleaned (daily, twice per day, weekly, monthly etc.), who is responsible for the cleaning. A deep and thorough cleaning is required throughout the kitchen.
