      • Operator indicated that they thaw meat out for a couple of hours on the countertop. Advised staff to only thaw hazardous products using approved methods - in the cooler, under cold running water.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • 3-compartment sink provided for manual washing. Drain tray provided. Commercial dishwasher is required for larger equipment like soup pots. The dishwasher has not yet been installed. Make sure it is meeting the high temperature sanitizing requirements for wash (60C/140F) and rinse (82C/180F) temperatures.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Handwash sink provided on side counter. Paper towel dispenser required.
    • 20. Do food handlers at the facility have adequate food safety training?
      • Food safety training certificate is for a basic food safety course and does not meet the requirements of Section 31 of the Food Regulation. Refer to the list previously provided for approved courses.
