    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The test strips available for confirming the concentration of peroxyacetic acid (PAA) used to sanitize food handling surfaces and equipment does not have an acceptable range for verifying the concentrations needed. The acceptable concentration of PAA for the sanitizing product used is 2000-2800ppm. The test strips in use measure to a maximum concentration of 160ppm PAA.Acquire alternate suitable test strips or other means of verifying the concentration of PAA in use for sanitizing food handling surfaces and equipment. The test strips in use should be capable of measuring concentrations above and below the acceptable limits for food handling (i.e., a maximum reading of 3000ppm or greater).
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Weatherstripping underneath the back door near the taproom bar is missing. Replace weatherstripping to reduce pest entry.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • The food handling permit posted in this facility was for a mobile unit and did not correspond to this facility nor its food handling operations.Post correct facility food handling permit in a publicly visible place.

      • The heat-sanitizing dishwasher was measured at a maximum temperature of 65.4C after several successive wash/rinse cycles.Repair dishwasher to ensure a rinse temperature of 71C or higher can be reliably reached as measured from dish level.Sanitize dishes using available chemical means until dishwasher can be repaired.
