      • Observation (CORRECTED DURING INSPECTION): Dishwasher is unable to reach >71C on the plate surface.
      • Corrective Action(s): In the mean time, stop the use of dishwasher for sanitizing dishes. Manually sanitize the dishes with bleach solution available on site. Diswasher can still be used to wash and rinse dishes. Operator is converting to manual sanitizing of all dishware.

      • Observation: Dishwasher unable to reach a temperature of >71C on the plate surface (consistent readings of 66-68C).
      • Corrective Action(s): Repair/replace the dishwasher to ensure temperature reaches >71C consistently on the plate surface. Conduct daily temperature checks on the equipment to ensure temperatures are consistently >71C prior to sanitizing dishware.

      • Observation: High temperature dishwasher is not currently in operation and unable to reach a temperature of >71C on plate surface to properly sanitize dishware. New dishwasher is in progress.
      • Corrective Action(s): In the mean time, dishwasher can be used for washing and rinising of all dishware/utensils. Dedicated sink must be used for sanitizing(100ppm of bleach). Contact health inspector once new dishwasher has been installed.

      • 315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
      • Observation (CORRECTED DURING INSPECTION): Obtain thermometers inside the 2 stand up refrigeration temperature.
      • Corrective Action(s): Operator obtained thermometers for both units and placed it inside the unit.
