     • One small cooler used to store coffee cream was maintained at 8C during inspection. One staff member was required to transfer all the coffee cream to another cooling unit and leave this small cooler empty. In the meantime, this small cooler must be closely monitored. Ensure that no high risk foods be stored in it until it can be proved to be maintained at 4C or below at all times.
