      • No sanitizer bucket or spray bottle was available for sanitizing food prep surfaces in the back kitchen area. Staff mentioned that they use sanitizer solution straight from the dispenser at time of use. Discussed with staff, the importance of using the sanitizer solution from the bucket or spray bottle.Ensure, there are sufficient number of sanitizer bucket/spray bottles available for all the food handling areas in the facility.

      • Test strips for measuring QAC sanitizer concentration was past their expiration date. QAC sanitizer was measured using Inspector's test strips at a concentration of 200ppm. Obtain current QAC sanitizer test strips to monitor and verify the required minimum concentration for effective sanitizing.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. Mold-like substance was observed on the caulking material of the dishwashing station.Replace the caulking material. 2. Surface of the faucet of the handwashing sink at the front counter was covered with duct tape. Remove tape and repair sink faucet as needed to facilitate effective cleaning and disinfection of the faucet.

      • The knife block situated near the dishwashing sink was observed to be in an unsanitary condition. Discussed with staff to ensure the knife block is thoroughly washed and sanitized before the knives are stored. The knife block was removed from the wall for cleaning.Ensure knife blocks are routinely cleaned and sanitized to avoid contamination.

      • The following areas require cleaning:1. Accumulated food debris observed in the corners of the walk-in freezer and walk-in cooler. 2. Floor surface underneath the dry food storage rack was dirty with debris,Clean all indicated areas and ensure all areas are maintained in a clean and sanitary condition.

Measure sanitizer solution to ensure adequate concentration before use.

      • Milk product found in the walk-in cooler was past it's best before date.Milk was discarded during inspection. Ensure food products are monitored for best before and expiry dates at delivery.

      • Scoops used for the flour and sugar was stored inside the bins touching the dry food products. Scoops were replaced on provided hooks during inspection. Ensure scoops are not stored on top of foods to prevent contamination.

      • 1) The floor of the walk-in freezer was dirty with debris from food packaging.Remove debris and clean walk-in freezer floor. 2) Table surfaces under the grill stations were dirty with debris and oil.Clean and sanitize table surfaces under the grill station.

      • 1) The floor area around the back door and garbage storage was unclean with debris and dirt. 2) Floor area under the dry food storage shelving was dirty with debris. Clean floors including hard to reach corners around the facility.
