      • Observation: Onion rings were prepared on the drainboard of the dishwashing sink- above the dishwasher. A bucket of slices onions placed directly above the garbage can. All removed from the area at this time.
      • Corrective Action(s): Ensure to have the food prep table reorganized to provide enough prep space in the morning. Food preparation at the dishwashing area is not permitted.

      • Observation: One of the handwashing sinks available at the front prep area requires a faucet replacement. Hot/cold running water still accessible.

    • 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Raw chicken had surface temperature measured at 9'C and internal temperature measured at 7.7'C. The ambient air temperature of the cooler was at 9'C on display. Staff adjusted the cooler temperature to 4'C and move the chicken to the adjacent cooler until the temperature returns to 4'C at the time of the inspection. No other PHFs were stored in the unit.
      • Corrective Action(s): Ensure to have all cold potentially hazardous food stored at 4'C or below at all times.

      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): High temperature dishwasher did not achieve the minimum required rinse temperature of 71'C at the plate level/82'C at the manifold after final rinse. Facility will continue to use single use containers/utensils only- for dine-in customers as well and follow manual dishwashing method as explained at this time. One of the dishwashing sink filled with 200ppm chlorine at this time.
      • Corrective Action(s): Ensure all staff are properly trained regarding this temporarily approved method of manual dishwashing. All cooking tools/food storage containers must be rewashed/sanitized- by soaking in 200ppm chlorine solution for at least 30 seconds.

      • Observation: Rat droppings were observed from the following areas:
      • - floor behind drink station
      • - floor underneath coffee station
      • Corrective Action(s): Ensure to have all droppings removed and affected areas sanitized prior to initiating any food prep in the morning.

      • Observation: Front entrance doors (2) were missing door sweep, allowing 2 small gaps on each side and 1 large gap in the middle. Technician was contacted and scheduled to come in tomorrow.
      • Corrective Action(s): Ensure to have the door sweep installed and contact the health inspector to notify.

      • Observation: Mouse droppings were observed from the following areas:
      • - dry storage shelves and floors underneath
      • - floors by the dishwashing area
      • Droppings were removed and areas were cleaned by staff at this time.
      • Professional pest control company contracted. Traps in place. Food stored in pest proof containers.
      • Corrective Action(s): Ensure to have all droppings removed and affected areas sanitized PRIOR TO initiating any food prep in the morning. Continue to monitor the situation.

      • Observation (CORRECTED DURING INSPECTION): Inserts of sliced cheese are being held on the cook line stored on top of ice. The bottom of the cheese stacks were probed to be 5.1C. The top of the stacks were probed to be 6.9C-7.0C. Staff are adding more ice every 2 hours.
      • Corrective Action(s): The inserts of cheese are sitting on top of ice, not surrounded. The bottom of the stacks will be colder than the rest.
      • Stack fewer slices of cheese - only what is gauranteed to be used within 1.5 hours. Add more ice if necessary.

      • Observation: 1) Drain flies seen around the dishpit, observed on the walls above and below the prep table outside of the janitors closet.
      • 2) Rodent droppings seen in the following areas: dry storage area under the shelves, behind the gas canisters, under the bag n' box rack, in the office around the filing cabinets and plastic bins, under the handsink across from the flat top
      • Corrective Action(s): Remove droppings, clean and sanitize these areas with a strong bleach solution.
      • Have pest control include a treatment for flies - fruit flies and drain flies. Forward the next pest control report to EHO to verify service.

      • Observation: Back storage area by the back door is cluttered. Fallen items, unused equipment and seasonal supplies are stored throughout here.
      • Corrective Action(s): Keep this area well organized. Continually rotate stock and supplies so that items are not stagnant.

      • Corrective Action(s): Clean and sanitize the premises as per your sanitation plan. Maintaining a high level of sanitation will help to prevent the presence of pests such as rodents and flies.
