      • The bib station was stored right beside the mop sink.-Ensure that the food is stored separately from the chemicals.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The walk-in cooler was measured at 7 degrees C.-Ensure that the perishable food in the refrigeration is maintained at 4 degrees C or less.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The dishwasher was not plumbed in.-Ensure that the dishwasher is operational.-Ensure that if it a high temperature dishwasher the temperature is maintained at least 71 degrees C. and for the chemical dishwasher the chlorine is maintained at 100ppm, and Quat is maintained at 200 ppm.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • There was no hand sink for the back preparation area.-Ensure that a hand sink is available for hand washing.
