Food temperature controlHigher risk
Bacteria multiply fastest between about 4 °C and 60 °C (40 °F to 140 °F). Inspectors check that cold food stays cold, hot food stays hot, cooked food is cooled quickly, and that staff have accurate thermometers. - 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Meat ball hot holding measure 44C due to lid not being secured because tongs were blocking its closure. Tongs moved to increase temperature. Other hot holding measured 69C.All operating coolers measured 4C or less. Temperature monitoring program in place. Temperature monitoring found concerns with one cooler, thus the facility pre-emptively removed food items from that cooler into another one. This self-initiated action is what we like to see. Repairs to be conducted on that cooler tomorrow.
