      • - Premises require a sandwich prep cooler with the lid-opening design to prevent this violation from occurring again. Replace the existing undercounter cooler to a prep cooler. Do not store above items in room temperature. All items were either moved back into a cooler and/or topped up with ice water. Replace the cooler until the next routine inspection (approx. 6 months).

      • - Various cut vegetables, moistened noodles observed in room temperature.
      • Corrective Action(s):
      • - Recommendation provided to equip a sandwich prep cooler to have easy access to these ingredients while they are in refrigerated environment. The current business model requires to pick and choose different toppings for the soup menus, and storing them in cooler with a door to open & close each time is inconvenient, leading to violation of storing them in room temp. Staff to discuss the matter with the owner and provide a solution to prevent this violation in the future.

      • Observation:
      • - 1 cockroach capture observed from the glue board placed on the left side wall of the dishwasher.
      • Corrective Action(s):
      • - This is the first time observing a cockroach at the store. Overall sanitation is maintained but hard-to-reach areas and corners are missed. Ensure to deep clean the kitchen including the surfaces of sinks, equipment & wall. Notify the professional pest control company that is scheduled to come in every month to enhance cockroach control.

      • Observation (CORRECTED DURING INSPECTION):
      • - Deep fried chicken inside the undercounter cooler were not cold to touch. Staff stated that they were prepared more than 2 hours ago and cooled down before placing them inside the cooler.
      • Corrective Action(s):
      • - Staff were just putting the chicken inside the cooler at the time of inspection. Ensure any cooked products are not cooled down in ambient temperature for more than 2 hours before transferring them to a cooler. If this violation is observed again in the future, products will be immediately discarded.

      • Observation (CORRECTED DURING INSPECTION):
      • - Hot holding case holding portioned cooked rice observed at 48C.
      • Corrective Action(s):
      • - Staff was instructed to discard any left over rice after 1 hour. Ensure hot holding unit can maintain the temperature of 60C or above. The food item that goes into the unit should be cooked or reheated to 74C or above before being transferred. Staff stated that the case takes time to warm up properly. Ensure that the case is fully heated up to 60C or above before transferring hot food items. If this unit cannot maintain temperature of 60C or above, do not use it and do not pre-portion the rice.

      • - Observed used cardboard box in direct contact with deep fried chicken for oil soaking.
      • Corrective Action(s):
      • - Do not use cardboard boxes to hold deep fried food items as they are not clean, sanitized surface. Use paper towels or metal strainer to drain the excessive oil.

      • - Low temperature dishwasher initially had no chlorine from the final rinse water.
      • Corrective Action(s):
      • - Chlorine tube had to be primed until the final rinse water read 50ppm. Ensure to check the chlorine level every day and prime the tube as necessary. Clean the grime build up observed in the interior surface of the dishwasher, and the side doors.
