      • Observation (CORRECTED DURING INSPECTION): 1. Roasted eggplants observed cooling in a tub. Staff stated they roasted it between 12-1pm. Inspection conducted at 3:15pm. Staff stated they are still letting cool. Cooling at room temperature needs to happen in 2hours or less.
      • 2. Discussed with staff about the cooling process. Staff unable to explain proper cooling times.
      • Corrective Action(s): 1. Instructed staff they must process the roasted eggplants immediately.
      • 2. Explained cooling after cooking. Once food is cooked, it must be cooled at room temperature for no more than 2hours. Once it is around 20C, it must be further cooled in the cooler. Within 4hours in the cooler, the food must reach 4C internally.

      • Corrective Action(s): 1. Staff to manual sanitize using one of the compartment of the two compartment sink. 100ppm chlorine bleach water in one of the compartments. Please ensure the bleach water compartment is always ready.

      • Corrective Action(s): 1. Bags of food must be stored off the ground, unless it is in a pest proof container.
      • 2. Do not hang fly strips above food preparation area. Hang them on the legs of tables, storage areas, doorways
      • 3. Please ensure all foods that is not in active use or cooling are covered.
      • 4. Please cover all the tubs of food and don't store on ground. Food being rehydrated is considered a potentially hazardous food. Please soak in the walk in cooler.
      • 5. Please empty, clean and sanitize ice machine. Please ensure the lid and seals is properly cleaned and sanitized.

      • Observation (CORRECTED DURING INSPECTION): Knives were kept in the crevices between the prep table and prep cooler. They were covered in dried food debris.
      • Corrective Action(s): Staff washed the knives and stored them on the magnet strips. Ensure knives are kept in sanitary condition when not in use. Crevices between tables cannot be cleaned and sanitized and will contaminate knives.

      • Corrective Action(s): 1. Use the 2 compartment sink to manually wash and sanitize kitchen wares. Use single-service utensils for patrons until dishwasher is fixed. 2. Staff re-dispensed the QUATs solution which tested at 200ppm.

      • Corrective Action(s): Repair fridge Do not use it for potentially hazardous foods.

      • Place a sign on the door of cooler unless it is repaired/replaced and able to maintain a temperature of 4 C or below.
      • If using this cooler to store coleslaw, ensure there is a timer sticker posted on the container and store for a maximum for 2 hours.

      • The middle door between the back entrance and the dining area remains closed but has a gap.
      • Corrective Action(s): Install door sweep on the middle door so that there is no longer a gap between the bottom of the door and the threshold.
