- Observation: The Permit To Operate is not posted in a conspicuous (easily visible to customers) location. The current year decal is not attached to the Permit.
- Corrective Action: Attach the current year decal to the Permit and post the Permit in a conspicuous location in the facility.

- Observation: Several cartons of eggs were stored at room temperature in the kitchen. Eggs must be stored at 4°C or less in order to reduce the risk food bourne illness. The Operator said that the eggs belonged to staff, for their personal use.
- Corrective Action: Store the eggs in the fridge and label them, "For Personal Use" or remove them from the facility.

- Observation: Boxes of food were stored on the floor in the walk-in freezer.
- Corrective Action: Elevate the boxes 6 inches above the floor to prevent the boxes from being contaminated.

- Observation: Amana upright freezer - the interior bottom has accumulated food and dirt.

- Observation: There is significant accumulation of grease/ oil and dirt on floor surfaces under deep fryers. There appears to be oil leaking from the machines. This is causing an unsanitary conditions poses tripping hazards to workers due to slippery floors.
- Corrective Action: Repair the machines so that oil does not leak on to the floor. Clean the floor thoroughly.

- Observation: There is significant accumulation of dirt on floors beneath cupboards/ shelves in the kitchen. This can attract pests and lead to contamination of the facility.

- Observation: (CORRECTED DURING INSPECTION) In walk-in freezer, Raw meat observed above other foods. (Public Health significance) - Contact with and dripping fluids from raw foods can contaminate other items and lead to food borne illness.
- Corrective Action: It was corrected at time of inspection, the meat was removed and put at the bottom. Staf to ensure raw meats are stored below and isolated from ready to eat items, produce and other foods.

- Observation: (CORRECTED DURING INSPECTION) Wiping cloths left on the counters between use. (Public Health significance) - Cloths once used can harbor and grow bacteria if left as used at room temperature.
- Corrective Action: wipes were removed from the counte and put inside sanitizing solution (bleach), Staff aware to store wiping cloths in a sanitizing solution of 200 ppm chlorine or 200 ppm QUATs. Mix according to the manufacturer's specifications and refill as needed.

- Observation: (CORRECTED DURING INSPECTION) Inappropriate equipment observed as scoops to obtain or move ingredients or product in one of freezers. (Public Health significance) - Scoop handles must be kept free from the product to prevent hand contact and contamination
- Corrective Action: Use food safe scoops in place of bowls or other containers to transfer ingredients and store in manner that does not contaminate foods.

- Observation: Inadequate sanitizing rinse solution in mehcanical glasswaher in lounge area. No sanitizer detected. (Public Health significance) - Automatic dish washers must provide a minimum concentration of 50 parts per million (ppm) as required to effectively sanitize dishware, 100 ppm recommended; Hand washing requires 200 ppm unscented bleach solution.
- Corrective Action: Immediately initiate hand sanitizing providing a 200 ppm soak for 2 minutes for all dish ware or use chemical dishwasher (preferred option by operators). Purchase sanitizer solution for glass washer and have a professional ensure it is connected to the glass washer. Monitor and log sanitizer concentration regularly so you know when the unit needs adjustment or repair.

- Observation: Old equipement in the kitchen that is not used. Also, food contact surfaces are worne out such that cleaning can no longer be adequate due to cracked areas on the surfaces which can become harbouring sites for pest.

- Observation: (CORRECTED DURING INSPECTION) Observed that there was uncooked frozen meat patties placed on the top shelf while french fries were on the lower shelf. Furthermore, in the fridge there was raw ham that was thawing on the top shelf and the produce was on the lower shelf.(Public Health significance) - Contact with and dripping fluids from raw foods can contaminate other items and lead to food borne illness.
- Corrective Action: Store raw meats below and isolated from ready to eat items and produce.
