- - Eggplant located in the walk-in cooler was mouldy
- Corrective Action(s): - All of the above-noted food items were discarded.
- - All food must be protected from potential contamination at all times. Ensure rigid, pest-resistant containers with proper fitted lids are being used for dry food product.

- - Deli slicer had dried food debris behind the blade and under the guard.
- Corrective Action(s): - Staff observed that booster switch was shut off. Booster switch was turned on again.
- - Temperature at the utensil surface was re-measured at 73C (at least 71C is required).
- - Ensure ALL equipment and utensils are re-sanitized today as a precaution.
- - Ensure dishwasher temperature logs reflect the required parameters for the dishwasher.
- - Quats sanitizer concentrate was changed, sanitizer was detected at 200ppm. Discussed: Obtain new test strips that are within expiry.

- Observation (CORRECTED DURING INSPECTION): Repeat violation. Dry food was again observed to be open and not protected from potential contamination in the dry food storage room where rodent activity was observed. Additionally, some of the rigid containers used for food storage were observed with their lids not fully closed.
- Corrective Action(s): - Food items that were open packaging were discarded.
- - Ensure that all food is protected from potential contamination at all times. Use rigid, pest-proof containers with fitted lids for items that pests may chew through (e.g. bags/boxes). Ensure all staff are closing lids properly after opening containers. Ensure items such as cans/bottles are wiped with a foodgrade sanitizer before use.

- Observation: Sanitizer dispenser located at three-compartment sink is not maintaining a vacuum seal for the concentrate (concentrate immediately recedes back into line once sanitizer dispenser is turned off, and it takes some time to return once dispenser is turned on). This is causing a loss of sanitizer concentration.
- Corrective Action(s): Have dispenser serviced so that it is in good working order and capable of consistently delivering sanitizer at the correct concentration (200ppm quats, or higher as per label specifications). Staff stated that this dispenser is not being used. Do not use this dispenser at this time, until it has been serviced and re-inspected by the Environmental Health Officer. - Corrective Action(s): Replace empty container with Quat sanitizer. Make sure no air babbles in a system. Concentration in the sany sink compartment must be 200 ppm of Quat (please use your test strips)..
