- 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
- Observation:
- 1) Mould build-up found in the food walk-in-cooler on the ceiling and cooler fan covers. Mould could fall into food and contaminate it.
- 2) Rodent droppings found behind the bar ice machine (under the stairs) and on the floor and low shelves in the upstairs dry storage area. Rodent droppings carry diseases.
- Corrective Action(s):
- 1) Wash the walls and ceiling of the food walk-in-cooler, and the fan covers to remove the mould. Increase the frequency this is done, to prevent the accumulation of dust.
- 2) Clean up the rodent droppings and sanitize any surface that came into contact with the droppings. Droppings must be cleaned up every day to prevent illness, and it is a good way to monitor the activity areas and levels of rodents.
