      • Observation (CORRECTED DURING INSPECTION): Two of the three sani-buckets barely reacted when tested with strips (quats). These two were filled approximately five hours earlier. One bucket was checked at 200 ppm and it was filled within the last hour or so. Also the liquid level of the buckets was quite low relative to the cloths immersed in the buckets. Keep in mind the cloths themselves will eat or combine with the sanitizer throughout the period of use for the solution.
      • Corrective Action(s): Make sani-bucket changeover more frequent (every two to four hours) and put more liquid in buckets as discussed. Replaced all buckets

      • Observation: 1. Ice machine has residue on ice formation apparatus.
      • 2. Dishwashing area backsplash has residue and stains and on caulking material.
      • 3. Walkin cooler cooling unit and fan covers have debris accumulations.
      • 4. Door gap at recieving door.
      • Corrective Action(s): 1. Clean and disinfect ice machine.
      • 2. Clean and disnfect backsplash and clean or replace caulking.
      • 3. Clean walkin cooler unit.
      • 4. Repair replace door-floor door sweep or door gasket

      • Observation: Ice machine significantly dirty. Scale and mould growth observed inside unit.
      • Corrective Action(s): Turn off and thouroughly clean and descale unit. Make sure to properly follow Clean In Place procedures to ensure unit is clean and safe to use. Send pictures of completed work.

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Several areas in the kitchen observed with accumulations of food debris including:
      • - Floor wall connection and around legs of shelves in walk-in cooler.
      • - Under and around counter and prep sink station at cookline.
      • Area around dishwash station, especially along the wall observed with build up of sediment and discoloured debris, possibly mixed with mould.
      • Corrective Action(s): Scheduled cleaning, including the movement of equipment where possible, needs to be refined. Either increase the frequency of these areas or make sure staff complete the work in an adequate manner to prevent the accumulation of food debris. Revise sanitation plan as required.

      • Observation: Dishpit is beginning to deteriorate.
      • A) The wall floor interface and baseboard construction is either missing or in poor condition.
      • B) Wall finish, especially around the plumbing network is patched and deteriorating and not in a condition that is easily cleanable.
      • Corrective Action(s): Develop a plan to properly repair this station to bring up to standard for food premises.
      • Plan for upgrades, preferrably within the next fiscal year.
      • **Send plan including timelines for improvements to this office within the next 3 to 6 months.

      • Observation: Minor ant population noted at dish pit.
      • Corrective Action(s): Make sure all food debris is removed and area dried daily. Contact Pest Control technician to address any pest activity noted in kitchen area.
      • More detailed cleaning and removal of food debris in kitchen will help control pest issues.
      • No drain or fruit fly issues noted.

      • Observation: Some aspects of regular cleaning could be improved. Noted minor food accululations in walk-in freezer, dry food storage room, floor at spray down station at dish pit, and behind under-counter garbage spots in kitchen.
      • Corrective Action(s): Make sure all hard to reach areas in the kitchen recieve regular attention during the cleaning process. Inform and audit staff work.
      • **Bucket under dishpit used to intercept leaking water from pipes must be changed and cleaned daily. Find and fix root cause as long term solution.
      • **dishwasher needs a demineralization cleaning by chemical company.
