- Internal temperature of the following foods in the hot holding unit were as follow. The following foods were cooked and hot held for 1 hour
- - Potato wedges at 52C (on the lower level of the holding unit)
- - Chicken wings at 55C (on the lower level of the holding unit)
- - Samosas at 46C (on the top level of the holding unit)

If internal temperature falls below 60C within 2 hours, the foods must be discarded or reheated to 74C and hot-held at 60C or higher. Owner indicated that they will discard the above food items after 1 hour.

- Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous foods in the front of the Monster mini cooler by the cashier not held at 4C or less. The creamers have an internal temperature of 7.9C. First two row of sandwiches have an internal temperature have an internal temperature of 10.8C. The ambient temperature of the cooler in the back is at 4C. These sandwiches have been placed in the cooler since yesterday night. Instructed operator to discard the creamers and first two row of sandwiches as they have been stored in the danger zone (4C to 60C) for more than 2 hours, which supports pathogen growth and can lead to foodborne illness when consumed.

Educated staff to use a thermometer to regularly monitor the internal temperature of the food
