      • Corrective Action(s): This method of cooling is typically not health safe to meet cooling requirements:
      • Step 1:
      • 60 deg C to 20 deg C within 2 hours: for soups acceptable methods are in an ice bath (no ice machine available), and/or ice wands (none available), wide-shallow pans
      • Step 2:
      • 20 deg C to 4 deg C within 4 hours: transfer to the fridge
      • Operator switched to wide-shallow pans. Provided a Food Cooling Chart to test if the former method is adequate if you want to continue that method

      • Corrective Action(s): Reduce the amount of cut potatoes by at least half
      • SMALL amounts of potentially hazardous foods at room temperature allowed if used up within 2 hours -any leftovers must be discarded do not place back in the fridge

      • Pest control report from Avon Pest Control December 29 -indicates rodent activity
      • Corrective Action(s): Clean and disinfect -check EACH MORNING with a high powered flashlight the kitchen premises for mouse droppings for cleaning and disinfecting
      • Keep ALL lightly packaged foods (i.e. paper, soft plastic, nylon packaged foods) in rodent proof containers -operator indicates the extra bags of pancake mix will be moved to the front drink cupboards

      • Observation (CORRECTED DURING INSPECTION): - 2-compartment sink in kitchen was occupied with food processing activities and was not available for handwashing.
      • - Front 2-compartment sink was occupied with pre-rinsing dishes.
      • Corrective Action(s): - One compartment of each sink noted above must be available for handwashing at all times as there is not a designated handsink. If an issue persists operationally, a separate designated handsink may be required.
      • - One compartment of each sink was cleared for handwashing at the time of the inspection.

      • Observation (CORRECTED DURING INSPECTION): - Raw meat was being processed adjacent to ready to eat food which was cooling in the back 2-compartment sink during peak food service time. This is an unacceptable practice due to potential for cross contamination.
      • Corrective Action(s): - Do not process raw meat adjacent to ready to eat food items. As there is limited preparation space, raw meat processing should take place not at peak food service times or when ready to eat food items are present on the same preparation surface/area. Operator reported raw meat will be processed prior to service hours in future.

      • Observation (CORRECTED DURING INSPECTION): - Bus pan of potatoes stored in cooler uncovered with tray stored on top. Bottom of tray in direct contact with potatoes. This is unacceptable and unsanitary. Bottom of tray is not clean, sanitized.
      • - Numerous containers of food stored in cooler uncovered.
      • Corrective Action(s): - Items were covered when Operator was notified. Ensure all items in storage (dry or refrigerated) are covered tightly to protect the food from contamination.

      • Observation: - Mouse droppings noted in the following areas:
      • - on floor under table in hallway
      • - on floor under shelving in dry storage room
      • - on stainless platform where dishwasher is located.
      • Corrective Action(s): - Clean up droppings and disinfect areas where droppings noted.
      • - Continue to monitor for any new activity, cleaning up droppings immediately if noted. If rodent activity continues, a pest control contract will be required.

      • Corrective Action(s): - Remove all moveable items from the floor and thoroughly clean entire floor to remove all grime, moisture and food debris. Keep floor area clear to facilitate cleaning and monitoring for pest activity.

      • Observation: - High temperature dishwasher was not operational. Operator reported this at the beginning of the inspection and that a new dishwasher was scheduled to be installed today. Premises was closing for the day and dishes were being rinsed and will be washed and sanitized when new dishwasher is installed and operational.
      • Corrective Action(s): - Repair/replace dishwasher and wash and sanitize all dishes prior to re-opening for regular service. - Technician arrived on-site at time of inspection to install new unit. Provide confirmation to district EHO once complete.
