   • 209 - Food not protected from contamination [s. 12(a)]
     • Observation: Boxes of cheese were stored on the floor inside the freezer unit. (Public Health Significance) Storing food directly on the floor increases the risk of contamination from dirt, moisture, and pests.It can act as a pest attractant thereby increasing the risk of cross-contamination which could lead to food- borne illnesses.
     • Corrective Action: Operator was asked to place all the food items at least 15cms off the floor.
   • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
     • Observation: Wiping cloths were left on the counters and not in the sanitizing solution after wiping food contact surfaces . (Public Health significance) - Cloths once used can harbor and grow bacteria if left outside of sanitizing solution after wiping down the food contact surfaces.
     • Corrective Action: Operator was asked to place the wiping cloths in a sanitizing solution (QUATs-200ppm) after use.
