- - Nesting materials and mouse droppings observed around the grease trap underneath the dishwashing sink.
- Corrective Action(s):
- - Pest control report from 2026 March indicates mice captures in this area and suggests to 'move' the grease trap to check the area behind. It is impossible to inspect the area in between the grease trap and the wall where the rodent activity is expected. Owner to consider upgrading the grease trap (to allow better spacing) and/or figure out a way to clean the area around the grease trap as this issue has been persisting for awhile.

- - Pest control technician will be visiting this week to identify entry & harborage sites. Monthly pest control in place but additional visits were made due to more activity observed as per the operator. Ensure to have all areas mentioned above cleaned & sanitized.

- - Hot held peanut sauce not reaching 60C.
- Corrective Action(s):
- - Reviewed the reheating procedure with the staff on site. Some items were reheated using the induction stove before placing them in the warmer and some were not reheated - as the number of induction stove is limited. Staff stated that soups are placed in the warmer first to be warmed up before being reheated. Ensure this procedure is all completed before the store opening. Proper reheating procedure is to bring the temperature up to 74C or above and then transferring them to a warmer unit to be maintained at 60C or above. Recap the process with the manager to ensure ALL hot held items are REHEATED and then moved to the warmer BEFORE OPENING.
