- Observation (CORRECTED DURING INSPECTION): Prep cooler inserts are all at 8-10 deg C. Probed multiple food items, inluding cooked chicken breast and beef.
- Corrective Action(s): Temperature log by the staff member on site indicates that the cooler was at 2 deg C (1.5 hours before the inspection was conducted). All foods are to be moved to the walk in cooler. Staff will be bringing out small portions of the foods in the inserts and discarding any food not used within 2 hours. A log must be kept to track this, as this is only a TEMPORARY fix until the cooler has been repaired/adjusted.
