One of the bar reach-in coolers was noted with an air temperature of 10.1C. No food were stored in any of the prep coolers in the kitchen. No cold potentially hazardous food was stored in the bar cooler.
      • Corrective Action(s): Fix the coolers so that they are able to maintain at 4.0C or below prior to storing any potentially hazardous food.
      • As per operator, he knew there was an issue with the kitchen prep coolers which is why they have been shut off. Services already ordered for the coolers.

      • Observation (CORRECTED DURING INSPECTION): A half used 3.25% 4 L milk was noted with an internal temperature of 10.6C. The bar reach-in cooler holding this milk was noted with an ambient temperature of 7.5C.
      • Corrective Action(s): Chef discarded the milk during the inspection. No other cold potentially hazardous food items were stored in this bar cooler.

      • Corrective Action(s): 1. Anything that was washed with the bar dish machine ever since bleach has been temporarily replaced into this machine must be rewashed and sanitized in the kitchen high temperature dish machine.

This cooler must be able to maintain at 4.0C or below. Do not store anything that is cold potentially hazardous in this unit until the temperature can be adjusted.

      • Observation (CORRECTED DURING INSPECTION): Noted cooked chicken being held in the kitchen prep cooler with an internal temperature of 7.9C.
      • A 4 L open jug of milk was noted with an internal temperature of 9.6C in the bar cooler.
      • Corrective Action(s): Both the chicken and milk were discarded by the staff and operator. Cold potentially hazardous food must be stored at 4.0C or below to prevent bacterial growth or toxin production.

      • 206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): The internal temperatures of gravy and meat sauce were taken at a hot hold unit - temperatures were noted at 55.0C and 44.5C respectively.
      • Corrective Action(s): As per staff, items were cooked previously and cooled down. These sauces were reheated at around 11 AM this morning and placed in the hot hold unit. However, the hot hold unit has not been turned on high and was unable to maintain the temperature over 60.0C. At 2 PM, the staff comes in and turn on the hot hold unit. Sauces were reheated and noted over 60.0C.
      • Going forward, heat the sauces after you come in at 2 PM and maintain internal temperature over 60C until service. Alternatively, once heated in the morning on the stove, the hot hold unit must remain on to maintain internal temperature over 60.0C at all time until service.

      • Observation (CORRECTED DURING INSPECTION): 2 knives noted stored wedged in between the cooler and hot hold unit.
      • Corrective Action(s): **Issue corrected at the time of inspection** Staff removed the knives from the noted area. Do not stored any clean utensils in this area as this area is hard to clean and sanitize and may not be in a sanitary condition.

      • Observation (CORRECTED DURING INSPECTION): No chlorine residual detected in the sanitize container holding in-use wiping cloths.
      • Corrective Action(s): **Issue corrected at the time of inspection** Operator added bleach to the sanitizer container. 200 PPM chlorine residual was detected after bleach was added.
      • Always ensure there is a sanitizer container available during food preparation.

      • The floor is dirty and no food should be stored directly on the floor. Also, debris and dust may be kicked onto the plastic wraps of the containers, which may potentially contaminate the food when use.

      • - Buildup noted on the shelves in the walk-in cooler.

      • - Ice buildup in the reach-in cooler below the grill top.
      • Corrective Action(s): Clean and sanitize the abovementioned areas and maintain in a sanitary condition at all time.

      • Corrective Action(s): As per food handler, the container of cooked lamb was placed in the hot hold unit about 1 hour ago. Reminded staff that food must be cooked to 74C prior to placing in the hot hold unit. **Issue was corrected at the time of inspection** Staff placed the container of lamb back in the stove for cooking before placing in the hot hold unit.
