- Observation (CORRECTED DURING INSPECTION): One container of cooked wonton at 62C was closed and left on the counter to cool. One pot of braised beef soup at 71.9C was covered and being cooled on the floor. Both items were cooked about half hour ago.
- Corrective Action(s): Do not close the container lid fully when cooling food as the hot steam needs to escape in order to cool down properly. Operator adjusted the lids. Obtain an ice wand as your current one is broken, and stir the soup with the ice wand to cool down the food within 2 hours as discussed. This is especially important when you are cooling the initial soup stock.

- Observation: An insert of raw spare ribs were stored on top of a box of jalepenos in the cooler. One container of spouts was open and stored in the metal fridge.

Heavy grease build up noted on the exhaust hood even though the last service was Sept 4, 2018. Operator says he cleans the exhaust filters every 2 months.
- Corrective Action(s): You must properly clean and sanitize all areas mentioned above thoroughly so that food debris do not accumulate and attract pests. Use 100ppm bleach sanitizer as discussed.

- Observation (CORRECTED DURING INSPECTION): Kitchen bleach sanitizer measured at 0ppm; front of the store detected 10ppm bleach sanitizer. Wet wiping cloth stored on the food prep table in kitchen. Repeat.
- Corrective Action(s): Remixed both bleach sanitizer to obtain 100ppm. Wet wiping cloth returned to bleach sanitizer. Please ensure to maintain the bleach sanitizer and wiping clothes as discussed. Bleach sanitizer solution should be emptied from bucket every couple of hours and changed with fresh water and bleach. Use the test strip onsite to determine strength.

- Observation: 1) A blender stored on metal shelf was observed to have food debris inside. Operator informs that he uses it to process nuts sometimes. 2) Cups were stored right side up at dining table. Staff informed that she was drying the cups that were just taken out of dishwasher.
- Corrective Action(s): 1) Blender must be properly cleaned and sanitized after use. 2) Properly air dry dishware by storing them upside down, and in designated drying area instead of dining tables to prevent contamination.

- Observation (CORRECTED DURING INSPECTION): a) Observed kitchen staff take out rice cooker pot and placed it back in rice cooker ready to use. The rice cooker pot still have brown and rice debris all over inside. The brown and white food debris were able to be removed when wiped with paper towel. b) No sanitizer in the front. When asked lady to make the same solution, she added soda and poured bleach into very little water (less than 1/4 depth) and when tested the solution was over 200ppm. Several wet wiping clothes left on the counter after use.
- Corrective Action(s): a) All food equipment must be properly cleaned, sanitized, air dried before reuse. When food equipment has food debris on there, you must wash the item again. b) 1 tsp bleach to 1 litre water makes 100ppm bleach sanitizer. One bucket required in the back and one in the front. Always store wet wiping towels back into 100ppm sanitizer after use. Determine 100ppm using test strips.

Food equipment such as large mixing bowl and food stored on the floor.
