      • At the time of the inspection, temperature records were available for refrigeration and freezer temperatures. These records should also include hot holding temperatures and any monitoring of cooking temperatures (i.e. hamburger tested with probe thermometer at 71°C prior to plating).*** Please ensure that hot holding and cooking temperatures are included in your temperature records. ***
