    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Available bleach was scented and had added fabric guard. Ensure plain, unscented bleach is used. Prepared chlorine sanitizing solution was not at 100 ppm, there were no test strips available or proper bleach to remake and retest the solution.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • There were no available chlorine test strips on site.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • A section of the ceiling has been removed and there are exposed building materials. Ensure this area is repaired so that all surfaces are smooth, impervious to moisture, and easy to clean.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Two ice cream scoops in use were being stored in a coffee mug of room temperature water. Acceptable methods of storage without the use of a dipper well are; separate scoops for each flavour stored inside the ice cream buckets or single usage of scoops and then washing all scoops in batches.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The chest freezer used for storing hard ice cream has several areas where a foam/adhesive residual is left and cannot be cleaned properly as such. Please remove these areas with an adhesive remover.
