      • 2. Low temperature dishwasher did not have any chlorine after the final rinse cycle. Chlorine bucket was running low and no chlorine pumped into the rinse cycle
      • Corrective Action(s): Required operator to prepare new bottles of chlorine sanitizer bottles. Ensure to have them available at all times during operation. Low tempeature dishwasher chlorine bucket to be replaced with a new one. Operator replaced all sanitizer bottles and dishwasher chlorine at the time of inspection. Detected 200 ppm of residual chlorine from sanitizer bottles. However, dishwasher still not pumping in sanitizer into the final rinse cycle. Contact technician to repair the dishwasher immediately. Until repaired, use the three compartment sink to manually ware wash all utensils (wash, rinse and sanitize cycle).

      • Observation (CORRECTED DURING INSPECTION): *Repeat Violation* In-use utensils were stored in a bucket containing soiled water.
      • Corrective Action(s): - The in-use utensils were sent to the dishwashing area to be cleaned and sanitized. The bucket was soiled water was emptied. The water was replaced with ice water solution.
      • - Staff was reminded that in-use utensils must not be stored in ambient temperature water.
      • - As mentioned previously, only store in-use utensils in either a clean empty container, ice water or temperature control (either less than 4 deg C or higher than 60 deg C) method.

      • Observation (CORRECTED DURING INSPECTION): One ceiling tile was missing in the back preparation area above the stainless steel prep table. The ceiling tile was moved to allow for repairs for equipment in the ceiling.
      • Corrective Action(s): The ceiling tile was put back in place and the table was cleaned and sanitized with food grade sanitizer which registered at 100 ppm chlorine.

      • Corrective Action(s): **Note: This is a repeated violation** Bring the utensils to the back for washing and sanitizing.
      • Moving forward, only store in-use utensils in either a clean empty container, ice water or temperature control (either less than 4.0C or higher than 60.0C) method.

      • Observation: 1. Large amount of ice buildup noted in the upright freezer.
      • 2. > 200 PPM chlorine residual detected in one of the sanitizer spray bottles.
      • Corrective Action(s): 1. Defrost the upright freezer. Excess ice in the freezer could be a possible source of contaminants for food stored within the unit. Ice in the freezer could also impede the proper functioning of the equipment.

      • Corrective Action(s): Clean and sanitize any areas noted with organic buildup and maintain sanitary at all time. If the hose cannot be cleaned and sanitized, please switch out to a new hose.

      • Corrective Action(s): Transfer the dumplings to a food-grade container and discard the plastic bag. Plastic bag cannot be washed and sanitized and therefore should not be used for food storage.

      • Observation: 1. Front of house handwash sink was not draining at the start of inspection. Then leaking was noted from the pipe below, spilling into the cabinet unit. As per operator, sink did not have an issue as of yesterday.
      • 2. Leaking noted from the faucet handle in the back of house handwash sink.
      • Corrective Action(s): 1. All food contact items in the cabinet below this handwash sink were not contaminated and moved to another sanitary location for storage. Going forward, do not store food or food contact items under sinks.
      • Operator will need to fix the sink as soon as possible so that all handwash sink are properly functioning without leaking. For the time being, they will use the sink in the kitchen area, around the corner from the front of house area.

      • 2) No food contact surface sanitizer available. Unapproved domestic disinfectant spray being used.
      • Corrective Action(s):
      • 1) Discontinue use of dishwasher until new dishwasher sanitizer solution is obtained. In the meantime, use 3 compartment sink for manual dishwashing and rewash all utensils/equipments/tools before use.

Ensure the pest company is aware of the on-going pest problem and the necessary remediation actions area taken. In addition to having a pest control company, maintaining a high level of sanitary condition within the preemies is key to eliminate and prevent the pest problem.

      • Observation (CORRECTED DURING INSPECTION): 0ppm of chlorine was achieved for low temperature dishwasher. Dishwasher unit was in use at the time of inspection to wash and sanitize plates and dishware.
      • Staff member were noted to towel dry plates after being washed and sanitized. Towel dry is not acceptable as it can potentially re-contaminate items that have been properly sanitized. Ensure to only air dry items after they have been sanitized.

      • Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher was not in good order as it was incapable of dispense chlorine. Air pocket was noted within the sanitizing line. Chemical was changed and machine was primed at the time of inspection. After the machine was re-primed, unit was able to dispense 100ppm of chlorine for multiple cycles. Ensure all plates and dishware are rewashed. Ensure chlorine test strips are used daily to ensure equipment is in good working order.
