    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Vinegar is not a food contact surface sanitizer. To prepare food contact surface sanitizer from chlorine bleach, mix 2ml (1/2 tsp) household, unscented bleach with 1 litre (1qt) tap water. To use this, first clean the contaminated surface with soap and water, then apply the sanitizer and allow at least 1 minute before wiping, or allow the surface to air dry.
