      • Observation (CORRECTED DURING INSPECTION): Hand washing station at back of food precessing area was blocked. This is the closest hand washing station for the staff that are packaging product near the freezer.
      • Corrective Action(s): Keep this clear at all times to allow staff to wash their hands when they need to. **This is a repeat infraction**

      • Observation (CORRECTED DURING INSPECTION): Bleach sanitizer tested at 0ppm. Bleach sanitizer must be >50ppm in order to achieve proper sanitation. Operator remade bleach solution for all spray bottles. Bleach sanitizer should be remade every 4 hours to ensure proper sanitation levels are kept.

      • Observation (CORRECTED DURING INSPECTION):
      • The bleach solution wiping cloths are being stored in had [Cl2] of 50ppm. The bleach solution is too low and bacteria will not be killed.
      • Corrective Action(s):
      • Immediately make a new solution of bleach and water, and the strength shall have [Cl2] of 100-200ppm. Change the solution every 3 hours. At the time of the inspection, the owner made a new bleach solution with [Cl2] of 200pmm.

      • Observation:
      • Found cracked and chipped, plastic food containers. Pieces of plastic could fall into food and/or bacteria will start growing in the cracks.

      • Immediately throw away all chipped, cracked and/or damaged food containers and lids. Purchase new food grade containers, and inspect all containers, utensils and equipment on a regular basis.

      • Throw away all used wax paper and plastic bags. Train staff to only use these materials once and then to throw them away.
