      • - Do not have them stored in room temperature for extended period of time. Recommendation to equip a sandwich prep cooler to prevent this violation. Items were moved back to cooler at the time of inspection.

      • - Observed multiple cooked bbq duck delivered from supplier measured at 31C on surface and at 50C internal temperature.

      • - It was convinced that the 2 hour has not passed since the cooking & transportation of these items. However, delivery should not occur in the middle of a cooling stage. Ensure to transport BBQ meat items either FULLY COOLED DOWN (4C or below) or HOT (60C or above) following the cooking stage. They have to be contained in insulated containers / ice box during transporation for temperature control.

Temperature setting was brought up at the time of inspection and it was verified that the ambient temperature of 60C or above can be achieved from this unit.

      • - Glass washer has broken parts and the sanitizer line was not working. Staff stated that they have ordered the parts already. Transferred the rinse aid line (that was operational) to a new bleach sanitizer tub - final rinse water measured at 100ppm chlorine. If chlorine sanitizer is not being dispensed in the future, use the high temperature dishwasher to wash cups and glasses.
