    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The low temp mechanical dishwasher was not connected to sanitizer. Operator was instructed to:- wash and rinse in the dishwasher and sanitize manually using 100 ppm chlorine (bleach) OR - wash, rinse, and sanitize manually in the 3-compartment sink until the dishwasher is connected to sanitizer. - obtain sanitizer for the dishwasher. Sanitizer was ordered at the time of the inspection.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Test strips for chlorine (bleach) were expired.Please obtain test strips to measure concentration of sanitizer solution.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Paper towels at the kitchen hand sink were not stored in a dispenser - the dispenser was out of order.Please store paper towels in suitable dispensers.
