      • Corrective Action(s): When manual warewashing, ensure the following steps are followed:
      • -wash with detergent, rinse with clean water, sanitize with approved sanitizer, then air dry
      • Always have a sanitizer prepared for surface sanitizing.
      • Staff made a sanitizer solution that registered 200 ppm Quats.

      • Staff relocated the apples to the top shelf.

      • Observation (CORRECTED DURING INSPECTION): "Lamb paya" (stew) thawing on the counter at room temperature.
      • Corrective Action(s): Do not thaw at room temperature.

      • -under cold running water or cold water that is changed every 30 minutes
      • -in the cooler at 4 C or below
