- Observation (CORRECTED DURING INSPECTION): Potato slicer blade guard component had not been disassembled, washed, rinsed, sanitized, and air dried. Food residue was observed over the glade guard component. Staff member informed the potato slicer was last used this morning, and the slicer could not be disassembled earlier today.
- Corrective Action(s): Staff member disassembled the potato slicer during the inspection and placed the blade guard component through the high temperature dishwasher. Ensure to disassemble, wash, rinse, sanitize, and air dry the potato slicer after each use.

- 1.)Chlorine must be at a minimum 50ppm to effectively sanitize utensils during mechanical washing. Operator adjusted the chlorine dispenser in the glass washer and 50ppppm chlorine measured on glass surface. All previously washed glassware were washed and sanitized again.
