      • Observation (CORRECTED DURING INSPECTION): The operator indicated wrong manual dishwashing procedure.
      • Per operator, the plates and utensils are washed and
      • rinsed inside the first compartment sink and the
      • plates and utensils are sprayed with hot water inside
      • the second compartment sink. The facility has a
      • 2-compartment sink.
      • Corrective Action(s): Plates and utensils must be sanitized in an acceptable
      • manner to eliminate or reduce potential pathogens
      • to a safe level in order to prevent foodborne illness.
      • Completely immerse plates and utensils in 100ppm-200ppm
      • Chlorine bleach solution and allow at least 30 seconds contact time.

      • Rodent droppings are indication of presence of pests. This
      • increases the likelihood of contaminating food and food
      • contact surfaces and spreading disease causing microorganisms
      • carried by rodents.
      • Corrective Action(s): Remove rodent droppings by following the steps:
      • 1) Pour mild bleach solution ( 1tsp bleach per 1L water )
      • onto droppings.
      • 2) Wipe the droppings with damp towels
      • 3) Apply same bleach solution concentration on affected
      • areas.

Staff should be monitoring temperatures regularly and taking action as required rather than just leaving foods in the coolers when the cooler cannot maintain a temperature below 4 degC.
