- Observation: Sandwich prep cooler meaured above 10 C. Operator aware of issue and has purchased a replacement unit. Delivery of unit forthcoming. Staff are using ice to supplement temperatures and minimal storage of food in this unit currently in place.
- Corrective Action(s): Adjust use of ice such that it comes in direct contact with food inserts. This will benefit food temperatures. Continue to keep minimal product in inserts to reduce risks associated with bacterial growth.

- Observation: Ice machine observed quite dirty. Biomat forming in the ice making area and along the adjoining internal infrastructure of machine. The unit will need to be shut down for this cleaning so plan to provide alternate ice source for 24 to 48 hours.
