Instructor stated that a work order has been issued to replace the unit. Instructor stated that temporarily that are utilizing the three compartment sink to manual ware wash. Sanitizing concentration registered between 200-400 ppm QUATs. Instructor stated that the wash and rinse water is replaced frequently and that temperature of the water is checked every 10 minutes
      • Corrective Action(s): - Service, repair, adjust, or replace the high temperature dishwasher such that it can achieve a sanitizing temperature of 71 deg C on plate surface during final rinse cycle.
      • - Temporarily use the three compartment sink for manual ware washing, ensure to wash, rinse, sanitize and air dry utensils and equipment

      • Corrective Action(s): The instructor emptied the food contact surface sanitizer bottle and placed a food contact sanitizer spray bottle that had a concentration of 200 ppm QUATs in the dishwashing area.

      • Observation (CORRECTED DURING INSPECTION): Frozen bananas were observed stored below raw meat in an upright freezer. Frozen prepackaged ice cream was stored in a box next to raw meat.
      • Corrective Action(s): Ensure raw meat is stored on lower shelving units in the freezer separately from potential ready-to-eat food. Instructor properly re-arranged food products to protect the ready-to-eat food from any potential contamination.

      • Observation: Dishwasher was not in good working order and it is displaying an error message according to the Instructor. Dishwasher is expected to be re-serviced most likely today according to the Instructor, and it was turned off at the time of inspection.
      • Corrective Action(s): Re-service the dishwasher to ensure it remains in good working order and is able to achieve the final rinse temperature of at least 71 degrees C at the plate level to achieve the sanitizing standard. In the interim, use the 3-compartment sink method to manually wash, rinse, sanitize, and air dry the preparation utensils/equipment.

      • Corrective Action(s): 1. Instructor transferred the ice scoop to the dishwasher. Ensure to store the scoop separately from the interior of the ice machine to prevent potential contamination of the ice from the handle.
      • 2. Instructor transferred the box of raw lemons over to a separate shelving unit to separate it from the raw meat. Ensure raw meat is stored separately from ready-to-eat food in a manner to prevent any potential contamination of the ready-to-eat food.

      • Observation (CORRECTED DURING INSPECTION): One insert of hot potentially hazardous food was at 50 degrees C internal food temperature in the front steam table and it was hot-held below 60 degrees C for less than 2 hours.
      • Corrective Action(s): Chef instructor informed that this menu item had been cooked earlier today prior to being placed in the hot-holding steam table. Chef instructor removed the hot-held menu item to reheat to at least 74 degrees C during the inspection. Ensure cooked/reheated food is hot-held at or above 60 degrees C in preheated hot-holding units prior to service to prevent growth of any potential harmful bacteria and/or potential production of toxins.

      • 3) If door locks are in the "down" position in two tall cupboards the door does not fully close allowing for a sizeable gap which may allow rodents to enter. Ensure doors are closed tightly each night.
