      • Large pot of dhal that was prepared the previous day was noted in the walk-in cooler. The lid was on. Dhal was 22C. Please ensure a rapid cooling method is used to ensure foods are cooled from 60-20C in 2 hours and from 20-<4C within 4 hours. This could include putting it into a blast chiller, using an ice wand or ice bath, putting food into small shallow containers and stirring frequently.
