      • Food grade containers holding food were observed on the floor of the walk-in cooler and walk-in freezer. Staff were instructed to move all the containers off the floor. Ensure that all food items are kept off the floor to prevent contamination.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • A chest freezer in the kitchen had some issues with ice buildup. Staff removed all items from the chest freezer and transferred it to the walk-in freezer to begin the defrosting process.

      • 1. Satisfactory cooler (below 4C) and freezer (-19C) temperatures and all units equipped with functional thermometers.2. Garlic butter was observed on the counter and measured at 8C. Operator informed PHI that he just removed it from the cooler. Educated to avoid the risk of botulism, store garlic butter at or below 4C or above 60C.
