- A large ham was observed in the domestic refrigerator. Staff advised that it had been cooked the previous evening. The internal temperature was measured at 23.4°C using one of my thermometers and 24.3°C using a second thermometer and 31.7°C with the facility thermometer.Staff were instructed to discard the ham, as it had not been properly cooled and was not maintained at a safe temperature. I discussed the importance of having a written food safety plan for items such as this to ensure proper cooking, cooling, and storage procedures are followed.Please arrange a time for us to meet and discuss the requirements and how to implement an appropriate food safety plan.

- Hot water was not available at the handsink. Paper towels were not provided at the sink; staff provided a clean towel for use and later located paper towels to place at the sink. It did not appear that handwashing was being completed, as staff were unaware that paper towels were not available for proper hand drying.
