    • 19(1)(e) A food establishment must be located, designed, constructed and maintained to ensure all of the following: (e) that there is effective protection to prevent the access and sheltering of insects, rodents and other pests.
      • In accordance with Section 2.9 of the NS Food Retail and Food Services Code, you must ensure: all shelving and food is maintained a minimum of 15 cm (6 inches) off the floor; storage areas are located in a dry, pest-free location. Shelving units must be repainted a light colour to allow staff to easily identify any contamination from rodent dropping
    • 19(2)(a) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator:     (a) a supply of potable hot and cold water at adequate pressure and volume with the appropriate facilities to store and distribute the water and to control the water temperature;
      • In accordance with Section 2.10(b) of the NS Food Retail and Food Services Code, you must provide hot and cold water, under adequate pressure, and in sufficient quantities to meet the peak demands throughout the food premise. The handwash station upstairs must be repaired to ensure cold water is properly connected and available.
    • 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator: (b) adequately designed and appropriately located hand-washing facilities;
      • In accordance with Section 2.14 of the NS Food Retail and Food Services Code, you must provide at least one hand washing station in each food preparation area. The handwash sink at the sushi bar must be equipped with liquid hand soap and single-use paper towels in a dispenser.
    • 20(2) A washroom facility must be constructed, equipped, and designed in accordance with the Nova Scotia Building Code.
      • The washrooms must be cleaned and maintained in a sanitary condition.
    • 23(1)(a) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (a) protect food from contamination;
      • In accordance with Section 2.9 of the NS Food Retail and Food Services Code, you must: store all food and food items a minimum of 15 cm (6 in.) off the floor on racks, shelves or pallets; store all food and food items a minimum of 5 cm (2 in.) from the walls. Store all boxes off the floor in the downstairs storage area.

      • A thorough cleaning of the entire facility is required, including the upstairs kitchen and the downstairs dry storage area.

      • Clean and sanitize all areas affected by mice. Mice droppings were observed on shelving units, food-grade bins, and along the floors in the upstairs kitchen. The downstairs dry storage area was heavily contaminated with mice droppings on multiple surfaces and food-grade bins. A decaying mouse was observed on a shelving unit.

      • In accordance with Section 2.4.2 of the NS Food Retail and Food Services Code, you must ensure all floors are durable, easily cleanable and non-slip. The carpet mat in the kitchen must be removed and discarded. Carpet is not permitted as a floor surface in kitchens or dry storage areas.

      • Clean and sanitize all areas affected by rodents. Mice droppings were found in the downstairs storage area. Cleaning required of the floor and on top/under the shelving units.

      • Ensure all hand wash stations are equipped with liquid hand soap and single use paper towel which is stored in a paper towel dispenser. Do not use bar soap at hand wash stations.

      • In accordance with Section 4.2.2 of the NS Food Retail and Food Services Code, you must ensure non-food contact surfaces of equipment must be cleaned at a frequency that will prevent the accumulation of dust, dirt, food residue and other debris. A thorough cleaning is required of the upstairs kitchen surfaces and the downstairs storage room surfaces.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • In accordance with Section 4.2.3 of the NS Food Retail and Food Services Code, you must: a. ensure food contact surfaces of cooking equipment are cleaned and sanitized at a frequency that prevents the accumulation of grease deposits and other residues. Cleaning required of the cooking equipment upstairs and the ice machine located downstairs.
