      • Poor lighting levels were observed in both the walk-in cooler and the walk-in freezer. Using the Omega HHLM3 light meter, the lighting level in the walk-in freezer was recorded at 19.36 lux, and the lighting level in the walk-in cooler was recorded at 43.03 lux. Ensure that the lighting levels are increased to at least 110 lux in both the walk‑in cooler and freezer to meet minimum illumination requirements and to support safe food handling and adequate visibility.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Multiple pairs of tongs used on the smoked-wall self-serve display coolers were found to be inadequately cleaned and sanitized. Staff acknowledged the concern, replaced the tongs with clean ones, and indicated they would increase the frequency of cleaning and sanitizing going forward. Ensure that all utensils are properly cleaned and sanitized on a routine basis to maintain safe food-handling practices.
