- 2. Fly activity observed underneath dishwashing sinks.
- Corrective Action(s): 1. Clean up droppings and sanitize affected surfaces. Continue to monitor pest activity and consult pest control provider as necessary. Clean and sanitize food prep surfaces every morning prior to starting food prep. Seal holes and gaps to prevent potential entry. Correct as soon as possible.

- Observation (CORRECTED DURING INSPECTION): Sandwich prep cooler measured 12 C top and bottom. Mostly stores fruit and pickles, but is a sandwich cooler so there were left over tuna salad sandwiches stored in a drawer. Typical to discard extras at end of lunch. Minimal food storage in unit.
- Corrective Action(s): Operator discarded remaining sandwiches and moved the fresh minced garlic to alternate cooler unit. Do not store any potentially hazardous foods in unit until serviced and operating within operational specs. Fruit (not melons) and cut veges ok to remain in unit until serviced. Send pics for confirmation unit is working properly again.

- Observation: Signs of mouse activity (minor) noted in janitor room, and to a lesser extent along dishpit wall. Also noted some yellow insulation on floor near electrical conduit. Definite gap around conduit for mice to access as an in and out.
- Corrective Action(s): Clean up areas noted where food debris accumulating. Clean up all mouse droppings in identified areas. Plug holes as discussed. Have Pest Control come in and provide strategic trap placement to eliminate any potential mouse issues.

- Corrective Action(s): Always cool hot soups and gravies using ice-water bath or ice wands. The internal temperature of foods must drop to 20-21 C before transferring to the walk-in cooler. The foods must be kept covered in the walk-in cooler
