      • Observation (CORRECTED DURING INSPECTION): 1. *REPEAT* (Since Dec 2025) Three large containers of gravy (labelled 4/20, Veggie Sauce) measured ~35°C internally.
      • Staff on site stated it was left to cool at room temperatures at 3-4am. Food was found still at room temperature at 11:22am.
      • Foods must be cooled from 60-20°C in two hours, and from 20-4°C in four hours.
      • Corrective Action(s): 1. **Corrected during inspection** Sauces discarded when identified.
      • One of the following is to be followed to to cool products faster:

      • 2. Cups made from coconut shells observed at bar. Staff onsite stated pina colada/drinks were poured directly into shells.
      • 3. Condensation observed in majority of bar glasses.
      • Corrective Action(s): 1. Use specialized kitchen tools as appropriate, in this case a cheese cloth/spice bag.
      • 2. Confirm manufacturer that these cups can be adequately sanitized and are properly sealed.

      • 2. Two door undercounter cooler in server station measured ~10°C at time of inspection. All refrigeration units must be able to hold temperatures of 4°C or less.

The three pails of gravy were voluntarily discarded by staff. Staff were provided education on proper cooling procedures and methods.
