      • Some food containers in silver standing freezer in the kitchen were stored without lids or protection.Staff replaced lids and or food wrapping on the containers to prevent contamination.Ensure all foods are kept covered during storage to prevent contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Bacon Tomato Jam was held in double containers (creating barriers to reach temperature above 60) in hold holding unit, temperature measured approximately at 50C.Bacon Tomato Jam was replaced in a single container in the hot-holding unit.Ensure all hot-held foods are kept at above 60C.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Some utensils were noted to be placed for drying on towels after washing process in the mechanical dishwasher.Staff replaced the utensils on smooth surface for drying.Ensure all dishes / utensils / equipment are air dried on smooth clean, drainable surfaces, drying on towels is not allowed.

      • Cooked sliced potatoes were found stored at room temperature on the counter in a large container.Action Taken:The PHI instructed staff to store the cooked potatoes in the refrigerator.Ensure that cooked potatoes are always kept refrigerated at or below 4°C.During busy hours, consider portioning the sliced potatoes into smaller containers and only taking out what is needed, rather than leaving the entire container at room temperature.

      • At the time of inspection:The high temperature dishwasher was at 70* C at dish level.The operator adjusted the temperature on the dishwasher with the help of Ecolab professional and found to be washing at 72.6 degrees.
