- Observation:
- 1) Dishwasher was not in use. Staff stated that they no longer use it as they "felt" it was not necessary due to the amount of equipment they were using. Staff stated they were using the three compartment sink method posted on the wall, using a bucket as the sanitation compartment as there is only a two compartment sink available.
- 2) No sanitizer available for wiping down food contact surfaces.
- Corrective Action(s):
- 1) This is not acceptable. Ths facility was approved on the basis that a dishwasher was available and would be in use. In addition to drinks, this facility bakes their own desserts.
- 2) Have sanitizer available at all times. Make a 100ppm chlorine solution every morning.
