      • Observation (CORRECTED DURING INSPECTION): 0ppm chlorine detected in the final rinse of the glasswasher due to tube not being fully inserted into the chemical sanitizer.
      • Once tube was fully inserted and glasswasher primed a residual of approx 60ppm chlorine was measured in the final rinse
      • Quat sanitizer measured well below 200ppm in spray bottles and from the dispenser itself.
      • Corrective Action(s): Due to logs not being maintained it is unknown as to when the tube was not fully inserted into the sanitizer. All glassware will need to be put through the glasswasher.
      • Ensure staff are checking and documentating daily chemical levels before the bar opens
      • Until the dispenser is repaired, mix Quat by hand to ensure a minimum of 200ppm is present.

      • Could not locate chlorine test strips for testing the final rinse on the glasswasher
      • Corrective Action(s): Contact technician to have compressor unti serviced. Temperature should be approx -18c when working properly.

      • Corrective Action(s): Repair/replace pressure gauge. Final rinse gauge should display approx. 20psi as per the manufacturers plate.
      • Replace burned out lights (Front food preparation area and walk in cooler).
      • Repalr/replace leaking faucet.
      • Repair/replace malfunctioning paper towel dispenser.
      • Wall mount the soap dispenser.
