      • The measured concentration of one of the QUAT sanitizer pails in the kitchen measured 0ppm. Informed staff who refilled pail with fresh sanitizer concentration. Retested concentration was acceptable (200ppm). Please ensure sanitizer concentrations are routinely monitored and concentration is acceptable.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A stainless steel container of eggs, a covered container of hashbrowns, and several slices of cake were observed sitting on countertops in the kitchen. Informed staff who placed products into the cooler. Please ensure high risk food products when not in the process of food preparation are properly refrigerated.

      • Kitchen hand sink paper towel dispenser was jammed at the beginning of inspection. Corrected without instruction during the inspection.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Bowls were used as scoops and/or scoops were left in dry goods when not in use. Discussed at the time of inspection. ACTION REQUIRED: store scoops in such a way that the handles are not in contact with the food product.
