- Observation (CORRECTED DURING INSPECTION): Four 20L containers of prepared gravy observed in walk in cooler labeled as having been prepared today, internal temperature of one was 83C. Staff stated the required process that they are supposed to follow is placing the food into the walk in freezer. Containers voluntarily relocated to walk in freezer during inspection. Note that room temperature cooling is safe until product has been < 60C for 2 hours, at which time it must be moved to the walk in freezer. Monitor impact on walk in freezer.
- Corrective Action(s): As discussed during last inspection, food must be cooled down to at least room temperature (if not lower) before being placed in cooler. Large volumes, such as 20L containers, retain heat for much longer periods of time so more rapid cooling methods must be used such as placing in the walk in freezer. Review this with all staff to ensure that the proper cooling process is consistently followed.
